A few years ago I ate pulled pork at my friends wedding. I want to recreate that magnificent experience, so I have me a big pork shoulder but I'm getting conflicting information on how best to roast it.

The plan is to season it without adding oil, nuke it in the hot oven for 30 minutes then turn it right down and leave it overnight in a cast iron pot.

Do I still need to add water if cooking for so long on a low heat? The recipe I like doesn't use water where all the others seem to.. :?

I'll put water in the tray but the meat will sit above it on a grill in the baking tray so not touching.
