Cypriot Bread - How to make?

Hi, my fave type of toast is made iwth what I call cypriot UFO bread - most common type of bread in Cyprus, but how can I make this bread-or-who sells in UK (remembering I'm in Leeds!)
Any Ideas?

Try the cypriot grocery stores, I am sure there are some in Leeds. They sell other Cypriot stuff there too!

You need the flour. Cheap no preservatives, then a rising agent, salt water, hey presto. There was a guy in Hendon (London) who used to sell the flour. Photis is his name, maybe somebody can advise if he is still around.

Plan a day trip to London, in your 4x4. Make sure you arrive at any of Yasar Halims or TFC shops early in the morning(North London). Fill your car up with freshly baked hot bread. Drive back to Leeds like a mad man (be mindful of the speed limits). tuff them in your freezer and take them out as you need them.

You are right about the Gabires from Cyprus bread. My first choice too. Failing that walk the streets of Leeds. It would be a miracle if a Cypriot baker does not exist there.

Defrosted bread is as good as freshly baked btw.

thanks denizaksulu - but really, i'm not going to london to pick it up - far too far, a last resort at best - and there is no cypriot baker in Leeds, maybe it's time for me to open one, once i learn the recipe of course Smile

One day, I swear to you, the shop was full of Greek Cypriots and not a TC in sight. Oh yes I saw an indian lady. I thought the TCs were boycotting the place. Laughing Laughing

I don't know what the flour is, but ring the shop in London. Ask if you can buy some and arrange for a TNT pickup.
Two phone calls and you can start making bread, and now with the advent of electric bread makers you don't even have to knead.
