Bill, for best results with chips try blanching them first and avoid overloading the fryer 'cos it drops the temperature too low for proper frying.

Yes, it's surprising how little some people understand basic laws of physics and heat transfer, if you want hot food you should serve it on hot plates not like the stone cold ones we were given in a "restaurant" the other day, a good meal spoiled by a stupid cook.
