My great aunt and my grandmother, impossible to say who made the best; just one (of each) was never enough in any case: hot or cold with a squeeze of lemon (or lime) they are heaven sent.

...no meat varieties can be made, with olives or with cheese for example.

Yesterday I was at a restaurant in Cambridge not a Cypriot in sight and yet on the menu was salmon beef chicken and halloumi. Naturally quarter portions but on the same plate.

...hazelnut comes to mind, and walnut, almonds too; not just sesame seeds.

...i didn't know these recipes before; who cooks with cactus fruits, i've always eaten them fresh from the plant, or cooled (traditionally in the well water).

Unique to the village it is a process which takes days.
