...koupes lalis.

My great aunt and my grandmother, impossible to say who made the best; just one (of each) was never enough in any case: hot or cold with a squeeze of lemon (or lime) they are heaven sent.

...no meat varieties can be made, with olives or with cheese for example.

Yesterday I was at a restaurant in Cambridge not a Cypriot in sight and yet on the menu was salmon beef chicken and halloumi. Naturally quarter portions but on the same plate.

...about olives,

https://sustainablefoodtrust.org/news-v ... nd-cyprus/

“Fifty-one per cent of land in Cyprus is in ‘critical danger of desertification’ due primarily to man-made actions, according to the UN; and 80% of farm holdings are run by people aged over 65. So, we have a big demographic problem looming,” says Netien. “What really drives people like me insane though – literally – is that we already have the solutions: we know how we can do it, and we have the tools. We just need the willpower.“

...but for those who return to the land the chance to produce a product highly prized around the world; and to enjoy the fruits of their labour directly.

...never tried this before, "tastes like carob" he says, she says chocolaty, and it's made from grapes.

Unique to the village it is a process which takes days.
